Description of the wine:
Their Pinot Noir clone is coming from Germany, which has thin skins and large clusters. These features makes it possible to make Blanc de Noir. Light colour, and vibrant acidity combined with small and elegant bubbles. The goal was to create their styles of methode traditionnelle ( hint of autolysis with fruitiness and freshness of the ariety). At nose it has red berries from Pinot Noir but with the 48 months ageing it goes towards yeasty, dried figs aromas. Vibrant acidity combined with Brut dosage.
Vinification:
Harvested in the beginning of september by hand. Whole bunch pressing, at a low pressure to be delicate. The juice is separated ( Cuvée, Taillle) .Cold settling at 10 Celsius degrees during 24 hours before fermentation. Fermentation started from 14 Celsius and ended up slowly at 28 Celsius to extract more colour and tannins.
