Description of the wine:
The sparkling wine, made from the harvest of the Bujdosó family’s 49th vintage. It reveals floral notes first when sniffed from the glass, followed by hints of lemon pie and pear. The 26 months of bottle aging result in fine bubbles, acidity and sweetness are in balance. It offers a vibrant sip, initially defined by citrus flavor notes, which over time give way to more pronounced white-fleshed fruits, in the form of apple and pear. The finish has a refreshing grapefruit character that entices you to take another sip.
Vinification:
Harvested in the beginning of september by hand. Whole bunch pressing, at a low pressure to be delicate. The juice is separated ( Cuvée, Taillle) .Cold settling at 10 Celsius degrees during 24 hours before fermentation. Fermentation started from 14 Celsius and ended up slowly at 28 Celsius to extract more colour and tannins.
